Kay Ellen's muffins

I did it Kay Ellen!
I am a baker because of you.
Kay had a "Chocolate chip pumpkin muffin" recipe on one of her recent posts , sounded delizioso, but my baking skills are not the best.

Any way not a good day for us, I was suppose to load up the truck and go down to Chula Vista for the Vintage Vixen Vendor Sale. Raffaele, my 13 year old was getting a cold a couple of days ago, in the middle of the night is temperature got pretty high. Swine Flue of course is the first thing we think of...
Dean takes Raffaele to the Doc. first thing this morning, what do I do....BAKE Kay Ellen's muffins to keep my self busy.Well Raffaele has Swine Flue, il mio bimbo...but as soon as they got home the smell of fresh baked muffins put a smile on Raffaele's face. Thank you Kay Ellen

"Chocolate Chip Pumpkin Muffins"
3 cups of all purpose flour
2 cups of granulated sugar
2 teaspoons of baking soda
2 teaspoons baking powder
1 15oz canned pumpkin
2 cups of chocolate chips ( I did 1 cup of white and 1 cup of semisweet)
4 eggs
1 1/2 cups oil
1 teaspoon of salt
1 teaspoon of ground cinnamon
**************************
Mix all the ingredients together
Preheat oven 400 degrees
Bake 16-20 minutes

  4. Just came over here from June's...love that sign you made her. My 13, just turned 14, had Flu A(swine flu)H1N1 last month along with pneumonia. He's on the Freshman football team and he was playing while sick and then got real sick, so off to the Doc he went and that is when we found out what he had. Ten days rest and antibiotics. He missed 7 days of school and is still making up work for it. BUT he got well!!!! And your son will too.
