BUTTER COOKIES AND L.A. FARMGIRL JAM

With one of the boys at home we have been baking a lot. Thursday we decided to make one of our favorite in absolute!
Butter Cookies with Jam...but not just Jam. This Jam is made with LOVE by L.A. FARM GIRL.
We used BOURBON & VANILLA TRIPLE BERRY and PEACH COBBLER jams.

After posting this photo on FB I was bombarded with e-mails saying "What about sharing the recipes!"
Butter cookies with Jam:

1/2 cup butter, softened
3/4 granulated sugar
1 large egg
1 teaspoon almond extract
1/2 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup jam
powdered sugar


(we doubled the recipe)




In large bowl cream the butter and sugar until light and fluffy, beat in egg, almond extract and vanilla. In small bowl combine flour, baking powder and salt, blend into creamed mixture. Wrap and refrigerate dough 2 to 3 hours.
Preheat oven to 375 F. Working with half the dough at a time on lightly floured surface, roll to 1/8" thickness. Cut into desired shapes. We use one glass cup for the bottom cookie and a shoot glass for the top cookie. Transfer in cookie sheets and back for 7 to 9 mins. Cool cookies on wire rack. Spread about 1 teaspoon of jam on flat side of whole cookies. Place cookie with hole on the top. Sprinkle with powder sugar.
